Is seitan suitable for all?
Whilst it is versatile mock meat, it isn’t suitable for everyone, mainly those that suffer from coeliac disease whereby the ingestion of wheat damages the small intestine leading to symptoms such as diarrhoea, abdominal pain and constipation and currently affects 1% of the population in the UK. As seitan relies on the structure and function of gluten, it is quite difficult to achieve similar results when formulating a gluten-free option. Due to the complexity of the production of seitan, it is often hard to get right. Biona Organic, a well-known health food brand has their recently launched seitan products on the shelves of Holland and Barrett, the virtual shelves of Ocado as well as many specialist retailers across the UK.
